How to Start and Stop on a Bicycle

How do you start moving without the bike falling? Everytime I do this, I IMMEDIATELY lose balance, and there seems to be nothing I can do about it.

The two o'clock position is a fairly good idea but in the video she's much closer to three o'clock. In my opinion 1:30 is the best option.

I've watched these videos on start and stop. If you're stopped why hold the brake levers? When you're not in the saddle and you're foot is on the ground, isn't you're foot the brake? Somebody please explain this to me. I've always used my foot when I am stopped
