Boneless ribeye steaks are what the local Rotary club uses for its summer steak fry meetings. The rest of the meal is a potluck (I always bring homemade bread and brownies), and each family brings its own beverages and condiments. (I found a bottle of Lizano Salsa de Vegetales in the supermarket clearance bin several months ago, and it makes a great steak sauce -- thicker than Worcestershire sauce, and nearly as thick as A1.)

I cut up skirt steak into bite-sized pieces and use it for stew meat in my slow cooker. I can get more evenly-sized pieces that way than with supermarket stew beef, and the slow braise of a slow cooker nicely tenderizes all those muscle fibers in the skirt steak.

sirloin is excellent to marinate & air-fry. very tasty, not so expensive. skirt is thin, so def. want to grill or pan-sear. ribeye is the king, of course. you really need to screw it up for it not to be great
