When I do the same dish"Pulpo a la Gallega"when I cook the octopuss I only put it three times in boiling water;that is:dig it in inmediately dig it out, dig it in again and out and in again and out than the dish is ready:use marine salt, pimenton molido, olive oil and som drops of Spanish Jerez that's it, try it that way I hope you like it, I'll try your recipe thank you.

Eric Thank you so much for sharing this recipe, I got a question. What do you do with the broth ? Can you eat it, seems to me that most of the protein stay in the broth and will be a waist to throw it away, I just want to know if is safe to eat it or if it could be repurpose ? I look forward for your answer. Thank you in advance.

I don't know... This dish kind of scares the hell out of me. You know, I absolutely love Seafood! It's one of my favorite things. But, I'm mostly into the common boring stuff. I'll eat almost any kind of fish, I love crab, Lobster, scallops, shrimp, calamari.... but when you get into some of the more exotic stuff I get skeeved. So you know octopus, sea urchin, some of that weird stuff. I don't know.

In particular, the suckers on a large octopus like this kind of grosses me out. Now, I actually love the tentacles on a squid. A small one! But those big nasty round suckers on that octopus are just too big and round and sticky outy and it's kind of gross.
