Wouldn't it still work if you let them pick the top? It's the same as if they touched that card and you take the one beneath it

So you actually taught this trick incorrectly as you state they have to take the bottom card when doing a selection. The important part of this trick is that you need to know what colour is on the top of the deck. This information is easy to work out after a couple of cuts because you can just peek at the bottom card, if it's black the top is red and vice versa. Then when 2 cards are selected they need to be placed back on top so that the same colour match. So if the top of the deck is a red card make sure you put the red colour selection down first, and then the black on top. If the top card is black make sure you put the black selection down first and the red. Otherwise the trick doesn't work. Then proceed with the rest of the trick as taught.

A cool way to have a card selected is to give the spectator a joker and just ask them to insert it anywhere into the deck, then you can take a card either side of it and it feels fair unlike the select a card and then I'll take one more out.
