First flat white I tried in the UK was about 3-4 years ago at a Pret-A-Manger, of all places. Started really getting into them a couple of years ago. For me (as a milk no sugar guy) they have the optimal balance of coffee, milk, mix and texture. Cortados are great too. I do diversify with others (e.g. pour over) but a flat white is my main go-to.

I'm a barista in WA, the espresso shot for flat white is the same with latte and cappuccino. Only difference is forth and latte serve in glass.

My first flat white was in this little coffee shop in London, it had to be the best cup of coffee I ever had, sucks it really hasn't made it to the U.S yet.

I work as a barista in AU and our flat whites are usually 1shot of coffee w/ 2-3mm of froth served just below rim.

the only difference here in australia between the three main coffees
cappuccinos, 2cm froth and chocolate powder
latte, 1cm froth
flat white, 0.5cm-no froth

for me a flat white is based on a shorter double shot (f.ex. 18 g in 30 g out), the milk is pulled till 26 degrees Celsius and rolled up to 50 degrees to keep it more fluid, served in a 150 ml cup, latte art optional :-)
