Greek Chicken Gyro | Akis Petretzikis

Marinade:
- 1 tbsp coriander seeds
- 1 grated garlics
- grated zest of 1 lemon
- 2 tbsp smoked paprika
- 2 pinches chilli flakes
- 1 tbsp dry thyme
Crush til finely ground
- add salt and pepper
- 60ml olive oil
- juice from half a lemon
Stir til combined

Prep chicken (he uses 3 boneless chicken thighs, doesn’t dry as easily as breast)
- Cut into thin strips
- Transfer to bowl and add marinade and mix well
- Can refrigerate up to 2 days; longer you marinade better it is
- Add chicken to pan and let it brown; don’t crowd pan
- When ready, add 1 tbsp lemon juice and stir
