0:43 for clarity, and while still being somewhat high-level for those that do not know much of a Debian-based OS... Ubuntu server contains a minimalist package set (most related to usability via the desktop environment, yes), roughly about 60% of the packages of the desktop version. There are some additional packages on the server that are not in the desktop image as well. So TL;DR, the server OS footprint is minimized and streamlines performance of the installed applications (which is to be expected for a server install).

There's some additional things that are different, such as the installer, and they used to be based on different kernels, though now they ship with the same, but I wanted to clarify that it's not simply the desktop environment.

I have a Pi with a touch screen kit. the commands to flip the screen are not the same as the usual PI boot\config.txt files. Any idea what config files to change in ubuntu to re-orient the display 180 Degrees?

That wasn't lbuntu, it was gnome desktop.
