Mint or spearmint doesnt have that “minty” artificial flavor. It comes from peppermint or menthol, but peppermint doesnt have the mint fragrance. That’s why it always good to mix those two.

For everyone who wants to try this themselves, most types of mint are very easy to grow yourself so you don't have to buy a big pile of leaves.

If you haven’t already, I think that a jalapeño syrup would be delicious! I’ve had a jalapeño jam before and the mix between spicy and sweet was perfect!

I just rewatched your strawberry video since they’re back in season and was like I wonder if I can do this with mint? Your video was top of the search result! I grow 7 types of mint, I’m curious if they’ll produce vastly different tastes or not, I’m excited it give them a try when they’re fuller later in the summer! The peppermint I have it ready to be harvested so I’m going to give it a go, and strawberries, while I wait😊

There's a much quicker way to do this. Put the mint, sugar, and water into a pot and then boil it until most of the water has been evaporated

This is called Sekanjabin. It can be served hot or cold. Boil the water, pour the sugar in the water, stir to dissolve. Take it off the heat, for 2 cups of water add 1/4 cup of wine vinegar which acts as a preservative but you won't taste it. The syrup made this way doesn't need refrigeration.
Put the leaves in, fresh or dry. Let it steep in the sugar water til it's cool. Strain the syrup into a bottle through some muslin to catch the leaves.
If you want to keep it in a bottle in the cabinet, while its still hot, add wine vinegar. If it's 2 cups of water then use 1/4 cup of wine vinegar. Steep and strain.
Now you can use this as the base of a nice refreshing iced cold drink. So fill glass with ice, add water and mint syrup to taste. you can add frozen fruit juice concentrate to the mint syrup if you wish. Orange or lemon is very nice.

My mum used to hollow out white raddish and fill it up with brown candice sugarrocks to make coth sirup for me and my siblings.
Kind of similar I realy want to try this method.

If it’s floral and fruity, it could’ve been lemon balm or holy basil, regular mint has some musk and bitterness … spearmint and peppermint have very distinct flavors.

FYI muddling the herb in the jar before adding the sugar on top will allow the oils to be absorbed by the sugar faster, making for stronger flavor.

The trick for a mint syrup is to blanch the mint, blend it with a simple syrup and then straining out the solids with a fine mesh strainer. The blanching prevents the mint from turning brown during and after blending.
