How do you foil a ‘tent’ a pie so crust doesn’t get too burnt?

I use a scissor to trim pie crust edge. Much easier and safer than a knife.

Do you have tips for how to crimp a pie without using your cut out circles? I’ve never trimmed the edges before I add my lattice strips so maybe that’s the trick.
