Sweet Potatoes
Ingredients:
2 White Sweet Potatoes
Instructions:
1. Preheat the oven to 425°F. Use a fork to poke holes into the sweet potatoes, set them on the baking sheet, and roast for 40 to 50 minutes, or until puffed up and soft inside when pierced with a fork.
Filling
Ingredients:
1/2 cup cooked quinoa
1/2 cup finely chopped spinach
2 tbs chopped red onion
1/2 tsp extra-virgin olive oil
1 tsp fresh lemon juice
1/4 clove minced fresh garlic
salt and pepper to taste
2 tbs chives for topping
Filling Instructions:
1. In a medium bowl, mix together the quinoa, spinach, red onion, olive oil, lemon juice, garlic, salt, and pepper.
2. Remove the sweet potatoes from the oven and let cool slightly. Slice lengthwise in each potato without cutting all the way through. Add the filling, chives, and tzatziki sauce over top.
Tzatziki Sauce
Ingredients:
1/4 cup cucumber
2 tbsp onion
1/2 lemon juiced
12-ounces vegan sour cream
1/2 tsp pepper
1/2 tsp salt
1 tsp dill
Instructions
1. Add all ingredients into a blender and blend until smooth.
2. Adjust seasoning with salt & pepper, to taste.
1. Allow sauce to sit for 15 – 30 minutes (in the refrigerator) before serving.
