Here's a tip: you can spread the apple slices on a pan and pre-bake them to avoid them becoming mushy in the filling. When you pre-bake the apples they'll release some juice, which you can gather up, mix with some flour, and pour back into the filling before covering the apples up with the crust. I always use this for apple pies!
