Why you should avoid making cornbread with Jiffy mix:

Jiffy cornbread mix, like many processed foods, contains certain additives and preservatives to prolong its shelf life and maintain its flavor and texture. One such additive is Butylated Hydroxytoluene (BHT), which is used as a preservative to prevent oils in foods from oxidizing and becoming rancid.

Some research has linked BHT to potential carcinogenic effects, particularly in high doses or with prolonged exposure. Additionally, BHT has been associated with other health issues such as allergic reactions and hormone disruption in some animal studies.

Ways to enjoy this healthy cornbread recipe: (variations to try)

There are numerous ways to enjoy cornbread! Here are some ideas:

Classic Cornbread: Enjoy it warm out of the oven with a pat of butter and a drizzle of honey. The combination of savory and sweet is irresistible.
Cornbread with Chili: Serve cornbread alongside a bowl of hearty chili. The contrast of the spicy chili with the slightly sweet cornbread is a comforting and delicious combination.
Cornbread Muffins: Bake cornbread batter in muffin tins for individual-sized servings that are perfect for on-the-go snacking or packing in lunchboxes.
Cornbread Toppings: Get creative with toppings! Try spreading avocado or cream cheese on slices of cornbread, or topping it with salsa, cheese, or even bacon for a savory treat.
Cornbread Waffles: Use cornbread batter in a waffle iron to make savory waffles that are perfect for topping with fried chicken, barbecue sauce, or even a fried egg for a unique twist on breakfast or brunch.
Cornbread Panzanella: Cube cornbread and toss it with tomatoes, cucumbers, onions, and your favorite vinaigrette dressing for a refreshing and summery cornbread panzanella salad.
Whether you prefer it sweet or savory, as a side dish or the main event, there's a way to enjoy cornbread for every occasion!

I wish Jiffy would change their ingredients. The Jiffy plant is close to where I was born and raised and I'm sure many MICHIGANDER'S have jobs at this plant. I'd hate for them to go under because of their choice of unhealthy ingredients 😔

When I saw this, I chuckled. I was just thinking some corn bread would be good, today. My mother made the Jiffy corn bread and I NEVER liked it. See, my Granny made real cornbread, and she used real butter and buttermilk. Never any sugar. But, the Jiffy was sweet, and that is what I never liked. Thanks Annette.

Thanks for the heads up on BHT and hydrogenated lard in Jiffy corn bread mix. These two ingredients are in all Jiffy mixes except for their cornbread with honey mix, and their baking mix. Jiffy cornbread mix was the go-to mix until now. I do not see these two ingredients in any other name brand mixes.

I never used Jiffy mix 🤨Since I allways read ingredients on the packages, maybe something didn't add up with me 👍I don't even trust the breads on the store shelfs 🤔 Nothing beats the homemade fresh bread 😋😋😋😋😋 thanks for the healthy recipes😋😋👍

I tried Sue Beckers corn bread recipe a couple of times too. It is good. However, I found the 25 minute bake time for an 8x8 pan was too long. I went 20 minutes, and it turned out a lot better, not dry at all.

Hi there! Can you speak to the health effects of the silicone non stick coating on the USA pans? I was so excited because I thought they were just non coated pans but then I read their website and it seems there is a silicone nonstick coating on them which worries me.

I’m 70 years old, made hundreds pones of cornbread, and have never made it with Jiffy, my only Jiffy purchases has been for specific recipes that call for the mix.

Not having a mill.. would pre-ground corn(meal) from a health food store, be as healthy -or close, compared to cornmeal from a standard grocery store?

Mouthwatering! I’m salivating. Quick question. Do you have to add flour?

I rather make my own homemade cornbread. I used to make cornbread with Jiffy but it never taste good to me. Taste artificial!! So it was no surprise to me with all the harmful ingredients. Thank you for sharing.

USA pans are coated and it dos come off with use and time! I babied my USA pans then I noticed dine size whitish circles only visible when tilted to side and in good light these spots start sticking telling me it’s the coating coming off! YIKES! Not healthy! My pans were at least three years old noticed on loaf pans and sheet pans the pans I use most! Never in dishwasher only damp wiped clean. Sad really I went to cast iron. Expensive learning.

Could you delve further into the type of corn to buy? My mill said not to mill one type of corn because it was too hard.(I've had my mill for 20 years and can't remember). I've heard of field corn and dent corn but not sure which to buy. Could you show how to grind it? Do you start on the highest setting and crack it, then keep on grinding it finer? Thank you.
PS I have a KoMo mill
PPS Komo Fidibus Classic - their website says it can do corn but not the type of corn.

Never was a fan of jiffy cornbread. Ive always loved homemade cornbread, as my grandmother taught me.

Everything shouldn't be of convenience, especially health via food. Thank you Ms. Annette for the confirmation that I can always be in my femininity whether at work or at home cooking nutritious meals.
