What is Dulce de Leche?

January Baking Club saw us all making Dulce de Leche Biscuits, crunchy chocolate oat biscuits which sandwich a layer of creamy buttercream and sweet, smooth dulce de leche and drizzled with rich dark chocolate to decorate.

But what is dulce de leche? Dulce de leche is most commonly eaten in Latin America, in countries such as Mexico, as a topping or filling for desserts and baked goods. It is similar to a caramel in taste and texture, however, is made from simmering milk and sugar together until thick and caramelised, a process which takes much longer than making a quick caramel. Baking powder or bicarbonate of soda is also sometimes added to dulce de leche to help keep it smooth and aid browning, and vanilla can also be added for flavour.
