I think the percentage you have said is incorrect. 1g is not 1% of 6g and since you have added 1g more, it becomes 28.57% of the mixture (oil & solubilizer) or 1.18% solution (including the 10g water) or 40% of the oil (2grams of Polysorbate 80 for 5grams of Olive Oil).

You can't say this is 100% solubilized or emulsified coz it just a few minutes, phase separation need some hours to separate and not in just few minutes.
