But I sure as hell know that 5k RPM in a RWD V8 with stock tires won't work out well.

Use launch control at lowest setting. Higher ones are for drag slicks and hot tracks.

1.) Launch RPM is WAY too high, and the driver was slow off the line. 2.) The Camaro was the US variant (notice which side the wheel is on) and the Mustang is the UK variant. This may just be camera angles but due to the performance difference I doubt it
