Followed guide and went mostly well. However I don't have the ability to access my Plex outside of my home network. It shows as not having an IP address in the Plex account, even though it says Plex is "Fully accessible outside your network".

Hey that is great, very clear and helpful. Have you made a video explaining exactly how to proceed when Plex tells me, "An update is available. Please install manually." I have Plex installed just like you have it, but I don't know what steps to take to do the manual update it is suggesting. Thanks!
