Shopping List:
2.5 lbs Sweet Potatoes
1 stick of butter
1 cup brown sugar
1 cup white sugar
1 shot of bourbon (optional) Spiced rum works nicely too
1 orange (juice and zest)
1 tbsp vanilla extract
1/4 tsp butter extract
1/4 tsp maple extract
1 tsp ginger paste
1-2 tsp cinnamon
pinch of nutmeg
1 pinch of salt

Directions: Peel and cut sweet potatoes into bite sized pieces. Clean and then dry thoroughly. Add to a 9x11 casserole dish. In a saucepot, make your candied mixture and pour over sweet potatoes. Toss them to ensure they are coated evenly. Cover with foil and place in a 400 degree oven. Total cook time will depend on size of potatoes but should be between 45-60 minutes. Remove foil cover during the last 15-20 minutes. Stir potatoes every 15 minutes to ensure they are cooking evenly. They are done when they are fork tender and fully caramelized.

My secret: Ading chai spice has all those spices in it at right ratio for flavors that no one recognizes it but flavor works do well if you don’t have other extracts.

Matt, you are a I've been making yams for years, and I usually cube my butter, then sprinkle the sugar, brown sugar, nutmeg, cinnamon, and pour vanilla. I am DEFINITELY trying your recipe as well. Say it with me "Look-In-GOOD!!!" Sending love from Portland,

Hey Matt, I’ve Been making candied yams for years and never thought about mixing all the spices in the melted butter before adding. I would just sprinkle and shake and dab my butter over the yams and it falls where it may. Your method seems better so I’ll be doing it that way. I also use some grand marnier in mine.

This was sooo good! I made these for the first time this Thanksgiving and got so many compliments. Everyone wanted to know who made the yams, lol. The only change I made was adding marshmallows as a topping during the last 15 minutes of cooking. Thank you so much!

Thank you so much for this recipe. Layered flavours - and a THICK sauce - of which there is no more than necessary. So many other cooks make so much sauce - and such thin sauce - that the tubers are SWIMMING in it. I really like there not to be so much of it - and for it to nice and thick. I've tried so many recipes throughout the year - but this one is the keeper. Thank you !!

PS - I sure wish I knew where you guys get your deep-sided bakers. "Rachel Cooks With Love" did her Sausage & Cornbread Dressing in a rectangular baker that was about 5 inches deep. I've looked all over the 'net - and can't find anything like it. I wish you guys would partner with some of the companies whose bakeware you use - so we can buy it, ourselves.
