RECIPE

Ingredients:
• 1 (2-4 lbs.) tomahawk steak
• Salt & pepper to taste
• Olive oil as needed
• 2 sticks (16 T) butter, softened
• 2 lbs. bone marrow
• 3-4 garlic cloves, roasted
• 2 tsp Worcestershire sauce
• ½ C parmesan cheese
• 2 tsp red pepper flakes

For the Bone Marrow Compound Butter:
1. Preheat grill to 375 degrees. Meanwhile, season the bone marrow with olive oil, salt and pepper. Once the grill is preheated, add the bone marrow and cook for about 30 minutes. Once the marrow is tender (registering 135-145 degrees), remove it from the grill.
2. Leave the grill on and increase the temperature to 500 degrees.
3. Next, scoop the bone marrow into a bowl with the butter, garlic, Worcestershire sauce, parmesan cheese, and red pepper flakes. Mix until well combined and roll tightly in plastic wrap to preserve in the refrigerator until ready to use.
**Note: for roasted garlic: place garlic cloves in an ovenproof container and cover in olive oil. Roast at 350 degrees until the garlic is fork tender.

For the Steak:
1. Trim the steak of any excess fat, discarding as needed. Next, season liberally with salt and pepper and set aside for 5-10 minutes to help the rub adhere.
2. Once the grill reaches 500 degrees, add the steak. Cook for about 20 minutes or until the internal temperature registers 125 degrees. Remove the steak from the grill and rest it for 15 minutes.

To Finish:
1. Carve the steak and plate with a dallop of the prepared butter. Serve with sides of choice and enjoy!
