Recipe
• Take 2 bones cut in half, drizzle on oil and season with salt, pepper, garlic
• Cook them on the @kamadojoe Classic II at 350F for 45 mins and add in hickory wood for smoke flavor
• Assemble bone marrow butter ingredients in a bowl: 1 stick room temp unsalted butter, 2 tbsp parsley, 2 tbsp rosemary, 1 head of roast garlic, 1 finely diced shallot, 1 tsp salt, 1 tsp crushed red pepper, juice from 1 lemon and bone marrow from both bones
• Put butter mix into plastic Wrap, roll it and place in the fridge for 20 mins to harden
• Smoke Steak at 225F until it reaches an internal temp of 115F
• Sear the steak over direct heat and pull once the steak reaches an internal temp of 127F
• put your bone marrow butter on the steak and rest it for 15 minutes
• Slice against the grain and enjoy

Most important part is to let the bones sit in water over night so it draws all the blood out of them
