I didn't see my favourite. In 1974 we were in Istanbul and walking down a residential side street near Hagia Sophia and stumbled across a little take-away. It was a louvered window opening onto the street from a private home and they made these parchment paper wrapped packets of deliciousness. I've never seen them since and at only at one Middle Eastern restaurant did I speak to an older gentleman who kinda knew what I was talking about. A mixture of meat, vegetables, and spicy broth (steamed I think). French cooking has a similar type of cooking technique, where they're baked. Perhaps not finding them again retains the recollection more powerfully. Lol

Before I traveled I had had Greek baklava many times, but, having the Turkish version was so amazing. So many super thin layers of phyllo pastry each brushed with clarified butter. The pastry had a richer almost shortbread like flavour, and retained its crispiness. The honey was also superior. Of course their heritage as the center of an imperial empire affected their cuisine.

i had ALOT of those tosti's with the turkisch sausage between it....those are the best in the world (even tho the sausage is quite expensive when you buy it, but worth it 💯 ) Also you cant beat a good durum! (im from the netherlands)
