Fortunately for me I have relatives living in this part of Germany. That means when I go visit them, they know where to take me in the area to find authentic local dishes. From smoked dark rye bread and smoked sausage or ham or smoked pork shanks to local beers and fresh caught trout served cordon bleu style. Then also the famous Schwarzwalder Kirch Torte should not be missed. Lastly, nothing better than to have your Grandmother's olde cookbooks from that region to read through and inspire one to cook something.

I know of a Mexican soup called Manudo, it is a tripe soup. Never had it though.

Hello Marta,

My family is from New Mexico and Texas. We enjoy eating a Mexican soup called Menudo. There are variations of the recipe depending on where your family roots are from. Basic recipe includes: tripe, pig feet, hominy, onion, garlic, Hatch red chile or California red Chile or Chile Padilla or Hatch green chiles & oregano. Everything is best cooked in a pressure cooker or crock pot. When ready to serve, top with cool-thin sliced raw cabbage, thin sliced radish, diced green onion, & fresh squeezed lime or lemon. I’ve been binging your channel and re-living my four years in Germany. I have to say I really love the Black Forest. I pretty much liked all of the food you covered, but the Käsespätzle mit wurst IS THE BEST. And a slice of BF cake afterward. Now for part 2.

Thank you so much! Makes me miss my time living in southwest Germany for 5 years (in Lahr, between Offenburg and Freiburg im Breisgau). I just made my partner very hungry when I showed him this. Love Badische cuisine, the geography, the climate, and the close proximity to France/Switzerland. Can't wait for Part 2! X0X

I love spaetzle. My mother-in-law bought me the special press and taught me how to make it. When I was a girl in the 50s here in Australia my grandmother used to cook tripe. I used to love it. She make it with a white sauce and parsley, I can't remember what else was in there now but it was a regular on the table. These days, I don't even think you can buy tripe. I have never seen it in the supermarkets.

I cannot think of any german dishes that include tripe however I have eaten a mexican dish with tripe a soup called menudo love these videos I feel like I'm there with you guys!

I have had Menudo that has tripe. As long as the tripe is chopped fine I can eat it.
