Vegan miso soup 🥣

I always order miso soups at restaurants so I decided to make it at home and I cant believe how quick and easy it is to make!

What you need:
4 cups vegetable stock
2-3 Tbsp dried wakame
4-5 white mushrooms, thinly sliced
Handful baby spinach
2-3 Tbsp miso paste
1 Tbsp soy sauce
1/2 cup Silken tofu, cubed
1/2 cup scallions, thinly chopped for serving

To make miso soup:
1.Add vegetable stock to a large soup pot and bring to a boil, then add the soy sauce, sliced mushrooms and dried wakame, and spinach to the pot and let the mushrooms cook in the vegetable stock for about 5 minutes.
2.Mix miso paste with a little of the hot vegetable broth or hot water and whisk to dissolve, add the miso paste to the pot and stir gently to combine.
3.Add cubed tofu and mix in the soup. Serve soup while its warm and garnish with scallions on top. Enjoy!
