📚 Blackened Mahimahi
Ingredients:
2 pounds mahimahi

Directions:
1. Add seasonings to a small bowl. Mix to combine and set aside.
2. Using a paper towel, pat mahi mahi dry.
3. Generously sprinkle seasoning over both sides of the fish.
4. Set a pan over medium high heat. Once the pan is hot, add oil and the mahimahi to the pan. Cook for 3-5 minutes, flip and cook for another 3-5 minutes or until the fish is opaque, cooked through, and flaky.
5. Remove from the pan and place on a paper towel lined plate to drain excess oil. Option serve with a squeeze of lemon and ENJOY!

Hi Relle. You are my go to channel everytime I need to learn how to cook something popular from Hawaii. I was thinking it would be cool if you did a series where you took a popular, classic, Hawaiian cookbook and try to prepare every dish one video at a time. I was thinking of that book "Our Favorite Recipes" published by the Maui Extension Homemakers' Council. Feels like everyone I know has one. Anyway thank you for making these videos. I'll no doubt be using them for the rest of my life. Aloha.

I'm definitely gonna have to try this again your way. Usually when I do a blackened salmon, I just use a hot skillet with no oil. Yesterday I tried cooking mahi for the first time, and I didn't want to use blackening seasoning because I wanted to try something different. I should've stuck with that seasoning, but still overall the fish didn't turn out flaky and moist like my salmon usually does. So the next time I try it, I'll have to use some cooking oil and see if that makes a difference.

True blackening does not use oil. I have been blackening since the early 80's.
