Sun Dried Tomato, Spinach, Basil & Mozzarela Quiche

Quiche is a crowd pleasing brunch dish to serve and there are so many variations. Here is a super yummy version you can try the next time you want a breakfast dish to impress. - Michele
Custard:
10-12 eggs
1 1/2 C whole milk
1/2 tsp salt
1/4 tsp pepper
Filling:
3 C spinach
10 basil leaves or 2 1/2 TB fresh basil
1/2 C sun dried tomatoes
2 C shredded mozzarella cheese
Preheat oven to 375 degrees.
Custard: Combine eggs, whole milk, salt and pepper.
Fillings: After custard is mixed up, fill a 9x13 baking dish with sun dried tomato, spinach, basil and mozzarella.
Pour custard over fillings. Top with salt, pepper and 1/2 tsp parsley. Bake until edges are brown and the center is slightly puffed and set for 25-30 minutes. Cool for 10 minutes before slicing and serving.
