Paired with a decent graphics card the i5 could run almost anything in Modern Games.

I'm not rich, just right, but having an i5 10th gen ice lake after spending 6 yrs on an i3 3120m is a treat, I could run modern games from low to med settings and still gets me excited, so taking it to budget i5 takes the cake...

Pure gaming - Intel ...others like gaming & streaming, productivity - Ryzen ... for me, because I don't really care with less than 10% fps difference in gaming, i choose ryzen.

The i5 10600 is basically an 8th gen i7 8700, it's amazing. 6 cores and 12 threads, ridiculous cache and clock speeds.

Why is the i5 paired with the RTX 2080 a better option than the i7 paired with the RTX 2070 ?
Surely the i7 will support it a lot better

I would suggest the i7 because AAA titles are already utilizing more cores and threads than ever before, but amd has taken the advantage for cpu imo. Had an i7 4790k and went to a ryzen 3600. 50% more cores and threads at around the same speed. Also 8 core 16 thread will be the best for future proofing, but 6 core 12 thread is fine for the next couple of years.

Currently have an 8700k. Just bought 9900k for $450 last week but no time to install it yet. AMD has come a long way but for me since I already have a good system and a good motherboard the 9900k is a much better deal that a complete new processor and motherboard.

I got the i5 8400 2, 8ghz paired with an rtx 2060 super 8gb and 16gb ram. I am more than happy how that runs.

I just ordered an i7 9700k to replace my i5 9600k ( I bought the i5 9600k at launch with a rtx strix 2070) because it is starting to struggle on games. The Intel 10th gen is releasing within 30 days so getting the i7 9700k is going to put you right under the new generation processors without having to buy a new motherboard for a 10th gen processor. New game titles are all about core count now with AMD pushing the core counts and forcing Intel to follow. A 8 core processor is going to excel for several years. The 6 core i5 9600k is already feeling the heat and it's time to get out of the kitchen. I am living proof.

I like I7 because usually higher base clock speed, has turbo boost which some do not I5, has hyper-threading, more cores, more processor cache.
