This garlicky, buttery purple rice will add a fun splash of colour to your plate - and it's devilishly good! The colour comes from red cabbage. I call this a 2-in-1 that combines a starch (rice) with plenty of veg together in one dish. Handier than making a salad plus a starch separately!

Ooh. This looks like it would be good with so many things. You could eat it with soup or veggies. You could also eat it with protein such as tofu, shrimp, fish.

I so enjoy reading your blogs because there is always something that cracks me up. I, too, thought of Prince's Purple Rain, when I came across the video. Would be fun to rock out, guitar and all, while the purple rice does it thing on the stove😂
