iPhone 13 Cinematic Mode - Is it any good?

iPhone 13 and iOS 15 have a new cinematic video mode that allows you more professional controls over the iPhone video capture.
You can change the F stop of the camera, allowing you to change the depth of field. With this option, you can make the background more blurry by changing the F Stop to 2.0 or you can have a mode in focus by increasing the F Stop to F16.

But, you are limited in your recording options. The cinematic mode is locked at 1080P at 30 frames and there is no option in the menu to change that.

It looks great but I was on a shoot today and discovered that there is no way to lock the white balance. A pretty serious error because of course the hue of the footage changes according to the colour temp of the light. I had some very annoying shifts. If I'm wrong - please tell me how to lock the white balance. I can find nothing online.
