Half right, you just need to sprout for a minimum of 3 days (on average) and then HIGHLY digestible. Live sprouts ARE the most healthy food you can eat.

How do you measure the lectin content? Is there a scale of say 1 to 10? Is there a lab procedure to analyze lectin content? What tools are used? Microscope, chemical analysis ? Has anyone published a report showing the lectin content of common foods?

Why does the rest of the scientific world seem to think sprouted foods are better for you? I wish Dr. Gundry would cite credible references for his claims.

Hello Dr Grundy, I find your research very interesting. I m a biologist my self. What’s your thought on “native Americans”who lived here longer than 8000 years BC ( I’m Latino with Spanish and quechuas mix ). Any study that would indicate “natives” adapted to digest better corn, beans potatoes and other food my ancestors ate?
