4 Cups all-purpose flour (512g)
1 3/4 Cups sugar(351g)
2 Cups Margarine (454g)
11/2 tsp Butterscotch extract
1/2 tsp Vanilla extract
1 tsp Lemon zest
1 tsp nutmeg
1/2 tsp salt
11/2 cups dried mixed fruits(225g)
21/2 tsps baking powder
10 eggs
1/4 cup brandy
2 tbspns Browning
2 tbspns Black treacle

This recipe shows you how to make a delicious Nigerian wedding cake. Those light fruit cakes that people look forward to at weddings.
This Nigerian wedding cake recipe is always a hit.

The mixed fruits can be pre-soaked in Brandy up to three months in advance or they can be used dry.

The cake can be soaked in Brandy or Rum to preserve it as any alcohol added to cake batter before baking will not act as a preservative. It will leave the cake with a richer flavour though.

•Can I replace 1/4cup of Brandy with Orange juice?
•if I soak the fruits with Orange juice, Is there a need to add the 1/4cup of brandy/orange juice?
