Making Apple Mead With Tasting

Making 1 gallon of apple mead with a tasting 14-months later.

Ingredients:
1 Gallon 100% Apple Juice (no preservatives)
36 Ounces (1 kilograms) Raw Honey
1 black teabag
1/4 Lemon (modified 1/22)

During the first 3 days give your musk a good stir, and to break up the fruit cap that will form if you are not using straining bags. Rack into secondary after 5 - 7 days, and continue to rack every 4-6 weeks until clear. Degas, back sweeten, bottle let age for at least 12 months total.

A gentlemen who now operates his own meadery started off making mead when he and his wife attended a party.
He tried it for the first time and fell in love with it.
So he started to make his own.
It got to the point where they had aging mead all over the house.
And surprisingly, his wife didn't shoot him.
So they now operate a meadery in West Columbia, Texas.
It's called Black's Fairy Meadery.
And while I've not made any mead yet, by watching your videos you are motivating me to do so.

Cyser has always been my favorite. I've made many cyser musts and i always stop to watch everyone else's video or check out their recipe. This was a nice watch before work.

One thousand kilograms of honey would be quite an investment ;).
Really nice to see the wide range of fermented drinks. Since last year my parents have bees and I have some apple trees, so this is a very interesting concoction. I would want a cider to be sparkling (which wouldn't work with the pasteurizing without some equipment), but I do have an absolute glut of apples, so this would be a more wine-like drink to give a try. Curious to see if my own apples have any advantages over store-bought. By the way, in the mead and cider I have made so far, I used my sourdough starter for yeast, which has worked surprisingly well. Haven't compared to wild-yeast (which would be even more variable I guess), bread yeast or commercially available yeast yet, so lots to try. Thanks for this recipe!

That is the most german thing i saw today. Reminds me of my grandpa, used to have a apple field and make mead and cider and whatnot.

I think you are doing the right thing. Once you know what is good, produce larger batches. I am doing the same. I do my test batch using 1 gallon and now I make 5 gallon batches of things I know I like. It's pretty much the same effort to make 5 gallons vs 1 gallon and you get 5 times more once you are done.

i havent tried Happle mead but i have tried Mapple wine while i was in the process of sourcing good honey. its high on my list too.

I have been thinking about making mead. I have been a honey lover since I can remember. I think I would like to experiment with using clove honey for fermentation and then back sweeten with a alfalfa or buckwheat honey.
