Note for people outside the US: Here in the States, the term cider is used to refer to what's basically an unfiltered apple juice, if you're outside the US what's branded as cider is probably an alcoholic drink made of fermented apple juice and you'll want to buy what is branded as unfiltered apple juice.

Another good one is just plan honey with apple cider. After you ferment thorw a few cinnamon sticks in and taste every few weeks until its right then you have a perfect cinnamon apple cider that everyone will love for Thanksgiving

Have you ever used Spanish forest honey in a recipe? I used it in your apple and cinnamon and the honey has malty flavours like described in this video

hot honey is toxic. Try to avoid this as you can, with small portions it wont hurt you but its always about the numbers.

Something you might be interested in playing with - a traditional method of further preserving apple harvests in some parts of the world is to take cider and reduce it down to a syrup. I've never tried it myself but it could be a fun ingredient in a ferment
