Vegeta giving Gohan advice and being harsh on him is the biggest sign that vegeta cares about him as a fellow saiyan and wants to see the best out of him because he's thrown hands at vegeta when he was only 4 and went damn hard.

Vegeta even scolded Goku for saving Dende and Hercule, instead of Gohan when Kid Buu blew up Earth. He really cares for him, in his own way

Not to mention his saiyan blood. Vegeta is the Prince of a nearly extinct race. He holds saiyans at a VERY high regard, and understands better than anyone that anyone with saiyan blood is a valuable commodity. Plus adding to the fact that gohan has demonstrated time and time again that he’s worthy of being a saiyan by beating up on frieza, killing cell, surpassing everyone by achieving his ultimate form, and performing exceptionally well in the TOP. How can vegeta NOT respect him? As an added bonus, gohan is goku’s son. And whether it’s outright stated by vegeta or not, there’s no one in the universe vegeta respects more than goku. They are the last 2 full blooded saiyans in the universe (besides broly). They’re essentially family, and gohan is included in that circle.

He also said “Gohan I’m sorry” after he believed he was killed by Buu. Vegeta took a lot of responsibility for his death and I do believe that is another reason he sacrificed himself in an effort to kill Buu. Vegeta was really hard on Gohan throughout this saga in particular but even though Gohan had slacked on his training he still very much respected the power within him. Let’s also remember that it was actually Gohan to trigger Vegeta’s anger and expose his vulnerability to Babidi and Dabura. Vegeta was so pissed that Gohan didn’t keep up with his training and knew he shouldn’t have been having so much trouble fighting Dabura.

Vegeta is the prince of all Saiyan's in his universe so he would feel somewhat responsible and even concerned about what few are left... He was given the best character development and piccolo probably has the 2nd best
