Instant Pot Lu Rou Fan (Taiwanese Braised Pork Belly Rice)

Pork belly is braised in a savory, rich sauce and smothered on top of rice. Lu Rou Fan is a delicious and comforting dish that has stood the test of time. RECIPE
500 g pork belly (with skin on) or ground pork with some fat cut into 1/2 inch thick and 1 inch wide. see notes
1 tsp cooking oil
1 cup hot water (if cooking on the stove) or more as needed
½ cup hot water (if cooking with pressure cooker)
4-6 hard-boiled eggs peeled

Fried shallots:
1 large purple onion
½ cup oil

Aromatics:
4 cloves garlic finely minced
10 g ginger
1 star anise
1 tsp five-spice powder

Seasonings: (adjust to your preference)
3 Tbsp light soy sauce more to taste later
1 tsp dark soy sauce
1 Tbsp Shaoxing wine
50 g rock sugar or use brown sugar

Garnish:
1 stalk green onions finely chopped
Cilantro leaves
