Taiwanese Braised Pork but 20% effort

Cooking doesn’t need to be hard or complicated. Often, you're simply looking for a recipe that gets you most of the way there with minimal effort, hence 80/20.

Taiwanese braised pork with rice or Lu rou fan, was one of my favorite dishes when I was kid. I’ve made this recipe before over stovetop, but today we’re massively simplifying it with an instant pot and some shortcuts (i.e. five spice powder instead of a spice bag, etc).

Ingredients:

- 1.5 lbs of pork belly, sliced (675g)
- 4 cloves garlic, minced (12g)
- 1 inch of ginger, chunks (25g)
- 1 cup chicken stock (or water) (240g)
- 1 tbsp light soy sauce (15g)
- 2 tbsp dark soy sauce (30g)
- 2 tbsp of xiaoxing cooking wine (30g)
- 1 tbsp brown sugar (12g)
- 1/2 tsp five spice powder (1g)
- [optional] 4 eggs

Looks really good, but I can’t eat meat. Going to try to somehow make this with tofu. Thanks for the recipe! :)

I don't have a beef/stew option on my Instant Pot, anyone have an alternative suggestion? Should I just use the pressure cook mode? Also, how long do I stew it once I add in the boiled eggs at the end?
