We love beets. After finishing a jar of pickled beets with just the juice left, we add a can of sliced or small whole beets to the juice and let them marinate a few days in the fridge. They aren't as pickled as the original ones but still have a tangy taste. You can do this a couple of times for big savings.

Beet roots have a glycemic index (GI) score of 61, which is considered medium.On the other hand, the glycemic load of beetroots is only 5, which is very low. Consuming beets appears to be especially beneficial for people with diabetes. Beets lower the risk of common diabetes complications, including nerve damage and eye damage. They're also versatile, delicious, and easy to include in all kinds of recipes.Anyone who has low blood pressure or is currently taking blood pressure medication should speak with a healthcare professional before adding beets or beetroot juice to their diet. Beets contain high levels of oxalates, which can cause kidney stones in people with a high risk for this. Since beets are high in the compound oxalate, eating too many can contribute to kidney stone formation.
Rather than boiled or roasted or cooked or canned or juiced or powdered form beet roots should be consumed in Raw form to get benefits of its nutrients.

I love beets! I don't ever buy pickles as I regularly make many types. Beets are one of my favorite and I don't put much sugar or salt in them so they don't spike my blood sugar or raise my blood pressure. All my pickles are very delicious!

ALA ( alpha lipoic acid) is a GDA ( Glucose disposal agent). With that said, beets should be ok for diabetics.

If the beet with the skins on are cleaned very well, cubed and cooked, can they be incorporated with other vegetables in a blender to make a beet juice, or are the beet skins harmful?

Thank you so much. Thought Beets were bad for Tyoe II. It’s a vegetable that I love so much, mixed with a small potatoe, carrots and peas basalmic vinaigrette is a delicacy. Oh thank you so much 😊 wish I could give you a hug through my small screen 📺! Could you also talk about water cress an excellent salad when mixed with basalmic vinaigrette is very delicious and notorious to lower blood sugar and A1C. But it’s pretty hard to find only occasionally
