Because honourable men and men who take their oaths seriously is scarce in Westeros by this point. Stannis doesn’t expect to meet one at the cess pool of the world in jon. He highly respects jon and probs views him as the son he wishes he had. I do believe had jon joined him then the events may have gone differently for fortunes for Stannis.
