I believe the verse is talking about the quickening or regeneration and the Holy Spirit coming on us.

Seems to me as another proof of only baptism being of the Holy Spirit and water washing flesh is just symbolic.

Amen not. you distract from the gospel, the path to eternal life with God. Visceral discomfort toward the Eucharist? Dude!!!! You are on the wrong path.

No. It does not undermine Christianity itself. It undermines Roman Catholicism itself by bringing the validity of its claims about the Eucharist into question. Many protestant Christian views have no problem with this interpretation of the verse. I know that, at least in times past, the Roman Catholic church has outright stated that Christians with differing ideas than those laid out by the church are not Christian at all, but that remains as their own view rather than the arbitrary truth.
