The actual answer is Russia is a lot more dangerous than Iran and the risk vs national interest equation works with Iran but not Russia.

I am not sure why Cameron's answer was wooly because the answer is pretty simple.

If NATO started shooting down Russian missiles then the airbases or launch sites would become targets for Russia.

Those airbases or launch sites would either be inside Ukraine, but staffed by NATO forces or on NATO territory.

At that point it is very clear to see how and why it would be an escalation and huge risk.
