Ingredients: Yield: 20
3 large very ripe bananas
1/2 cup creamy peanut butter
1 teaspoon vanilla extract
2 3/4 cups oats
1 1/2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 1/4 cups semi-sweet chocolate chips

Directions:
1. Preheat oven to 350 degrees F. Line two large baking sheets with parchment paper.
2. In a medium bowl add oats, baking powder, cinnamon, and salt. Stir to combine.
3. In a large bowl mash the bananas with a wooden spoon.
4. Stir in the vanilla extract followed by the peanut butter.
5. Add the dry ingredients into the wet mixture. Stir until well mixed. Add the chocolate chips. Stir to combine.
6. Drop by spoonfuls onto the lined baking sheets.
7. Bake for 12-14 minutes or until cookies are slightly browned.
8. Transfer to a wire cooling rack to cool completely.
