People may start gambling sober, but usually drinks are a big part of what keeps them gambling. Also, most of his Starfleet and Bajoran business during the day is meal service. I'm sure the holo suites are still running, but without food and drinks to keep people hanging out before and after their sessions, he is probably taking a loss on them.

In the wild west they would advertise saloons as serving a "Free Lunch" and then once serving salt pork, dry crackers, and presumably salted peanuts and other parching food they then sell them alcoholic beverages to quench their thirst.

Then once drunk "hey, who wants to gamble?"

This is the origin of the phrase "no such thing as a free lunch" even though the lunch is literally free, once you can't resist also buying a drink. Or two. Or more.

It's a bar that has one casino game. It's like saying a gas station that has a few slot machines would be fine if the pumps broke. People go to Quarks to get drunk, and when they're drunk they make bad decisions at the roulette, I mean, the Dabo Table.

Yes, they would. People are fickle like that. And, especially if the casino is well-known for its wings, people would certainly stop going if the wings started being bad.

Also, Quark's Bar is special because it has things that you can't get elsewhere. Quark has recipes saved on local storage devices, so his replicators can make things that others can't. Quark also uses some Ferengi business tactics to acquire items, recipes, secrets, etc, that he uses at the bar.

I always took it to mean if the replicators are down then the holodeck is probably out of commission too. Because the holodeck is described in TNG as being a more complex version of the replicators. And if he can't use that sort of technology at all, then he probably can't cheat his customers at the tables. So he just shut down completely.

Having managed a bar, I can tell you that running out of all the little things that you barely notice as a casual customer can quickly create a less than appealing place to hang out. Even gamblers will be put off for lack of food/snacks/drinks. They might stop by for a round, but then leave for other places.

I wonder if Quarks has limited licenses for certain food and alcohol, making it one of the few places to get them on DS9. Customers come for the beer and trans fats, but stay for the gambling.

Drinking is the primary reason for a bar. Everything else is a secondary activity (gambling, food, holosuites), very much like a pub. If a pub has no drinks, people wouldn't play darts, eat or hang out there. And Quark serves real alcohol too.

While he has a number of "normal" spirits, I believe most of the drinks are also replicated, so not drink, no food, only losing money. I doubt it would be completely dead, but it'd hurt.

Also, you figure the entire promenade is empty. There's no one out the window, so people can't even hop out to a stall for something to drink.

It's a bar. Even those that go to do something other than drink will still drink.

Every suite in DS9 has a replicator, I wouldn't go the one place I can't get food and drink

Tbh I'd imagine that Quarks holosuites would perhaps be Quark's biggest customer draw. It's a self-contained private room that can simulate any desire for a price. You can fight dragons in a castle, you can relax at a spa, you can snowboard down the side of a frozen nitrogen mountain, or you can murder your boss over and over again. It's always puzzles me that Quark never purchased adjacent businesses and just filled them with more holosuites, or there wasn't a small complex where people just go into a small foyer, select a program, pay and then enter the holosuites.

The holosuites in reality would never be empty. It's would make money hand over fist! 😂

I always imagined that like 85 % of the Booze Quark serves is Synthehol because real alcohol is hard to come by/illegal in some cases this far away from the main section of federation space
