Peruvian Green Sauce - Salsa Huacatay or Aji Verde

This Peruvian green sauce is one of my favorite spicy condiments. It’s usually served over grilled chicken but I ❤️it so much that we add it over meats & grilled veggies too. I even dip fries & tostones on it:)).

I finally received my Huacatay and Aji Amarillo pastes in the mail from Amazon. I see so many versions of this and a lot of the commentary from Peruvians is that you should never add jalapeno peppers (seeded or unseeded) BUT I can confirm that many Peruvian restaurants here in the US add jalapenos as well as use the Huacatay and Aji Amarillo paste but the challenge for them is that the paste version loses its heat index and you can't grow either pepper in North America (or at least it's not available in freshly grown amounts here) so using jalapenos is a close substitute. One thing I've noticed about the note you can smell from Aji verde is that it is very similar to the smell of roasted bell pepper. I personally love that smell but you cannot really taste it from the Bell pepper so having this Aji verde is like having a salsa made it!
