Ají amarillo will turn the sauce very yellow; even spicy hot just by leaving the veins (my personal best is cleaning, cut in long slices and let "boil-and-roast" in a pan with little water, then peel it before adding to the mix).

If you live in USA you can find canned or frozen yellow pepper in Latin supermarkets like bravo

yellow peruvian pepper (whole) is very hard to find outside of peru! i would suggest looking for the sauce that comes in a jar (already blended) and search for one that isnt spicy… (the spicy version doesnt really let the flavor come through)… currently living in germany and this is the way i make huancaina at home!

New Zealand's "national sauce" is just a chip dip made from reduced cream, onion soup powder and vinegar lol. But don't be fooled, it is heavenly.

This may be a yellow pepper, but it's flavor profile is nothing like what this sauce is. Go find a supermacardo near you and find the pepper paste. It's worth it and nothing like you've had with our American peppers.
