I dont eat store bought meat like chicken, beef or pork. I was raised and currently still only eat any meat if I or someone I know personally raised or hunted it. So all the meat I eat is venison, elk, caribou, boar etc.

The thing is, the amount of fat in domestic animal meat is kind of gross if you grew up not eating it and have never really eaten it much in your life.
The meat I eat has very little fat whatsoever in it so a lot of bbqing that relies on the meats fat just doesnt work.

But these techniques for what would be considered the tougher cuts work great. I watched this vid and did a slightly altered version of this on some venison, and it came out excellent.
