The longer you ferment the softer the cabbage becomes, also if you are fermenting without an airlock open the lid once in a while to release the pressure from gas buildup during fermentation or it could explode

Btw a tip from a Korean, next time I recommend soaking your cabbage in salted water to kill the bugs, make sure soak for a few hours at least to get all the bugs out, this also makes the cabbage slightly salty which gives it more flavor. However this is up to you, happy making! 🎉

Another trick to getting your kimchi sour is to use the old mother from the previous batch. Save a little bit of kimchi juice from each batch and it will kickstart the next one in the fermentation process. I've had a kimchi that had a 30-year-old mother in it, because they kept using the same juice. You can have a full flavored kimchi within a few days.

I would also suggest finding a your closes mom and pop kimchi shop. I usually get a huge tub of fresh kimchi for $20 !!

I've never made kimchi. It's a little strong for my liking anyway, but man would I enjoy making it!!! The entire process just looks so therapeutic!!! And something you really have to use your hands to make. 👌👌

Sadly I have to make it myself because 1. I’m allergic to the small shrimps used in normal kimchi and 2. The vegan kimchi at the store is very interesting taste and so I make it at home nice and fresh. No allergic reactions, I can keep it in the fridge for a while and it’ll still taste amazing

Bro the price of produce is insane where I live rn. An average Napa cabbage here is $9. Thats not including any other ingredients. So if I want any radish, apple, garlic, it’s literally the same price as buying a large jar. My area also doesn’t have H-mart/any good kimchi so I ordered it online and it was $18 for a 64 oz jar but I had to pay shipping

Luckily, I have a shop near me who makes homemade kimchi for only 20 dollars a jar. I love the old guy so much! ❤

Just to be clear, this is specifically baechu kimchi (배추 김치), meaning nappa cabbage kimchi.

There are soo very many varieties of kimchi.

Make it yourself!
Tastes a lot better and you k ow exactly what goes in there. Plus it's simple to make.

I also think it depends on your preference of how fermented you like your kimchi. Because, based on the fermentation of your kimchi is the basis for the dishes that you eat. And I would say that if you just want kimchi to eat with your meals as a side dish, then you would probably want fresher kimchi so you would probably want to make it yourself because the stuff in the supermarket is sitting on the shelf, but if you want that more sour kimchi for side, dishes, and making soup and stews and pancakes and stuff like that then you would want to go with the store-bought

As a non-Korean It’s been 5-6 years that I’ve been making kimchi for me and my family (also gifting it out) highly recommend that people make it the flavor is night and day compared to store products plus I love spicy food and prefer my kimchi spicy———I’ve made kimchi at first using the mangchi recipe who is a Korean YouTuber now I mix her recipe with a few others to make it fit what I like while staying traditional🥰❤️
