Spring has officially sprung and despite the 1.5' of packed snow still underfoot, the sap is running! Come on out for a quick walk around as I take a look at the maple trees I've tapped for the 2019 maple syrup season. Check out how the nice weather has kickstarted the season and the amount of sap that's being collected as a result. Enjoy the sun and grab your boots as maple syrup is going to be boiling in now time!

Tap your trees on the direct due south side. It takes time for the trees to start flowing as the radiant heat from the sun thaws the tree out. Some trees thaw faster then others is why you see different flow rates. To many variables to give one absolute silver bullet answer though thaw rate is the big variable.
