why does the parry look more like dodging backwards?

Don't spread misinformation that's not parry, parry is a defensive move where you block the punch by ✋ to stop hitting you, you literally did a pull (step back) movement there and the last step is called pivot

Its really nice to tell your opponent what to throw, so you can be ready to dodge .

Correction: The "parry" in this video is a pull back or lean back.

In fact, most of the time you learn and practice dodging techniques. It's preventive 'cause you know that depending on your choice of blow you open a breach in your guard. So the use of dodges is a way to avoid to be hit back even if the opponent doesn't hit you. Counters are less susceptible to reach you.
Plus, you can immediately use the momentum for another killing blow.
Being static is the best way to have a bleeding nose, unless you are Chuck Norris. Chuck Norris don't do nose bleeding.

It's not a parry, it's a pull

These are not parry and side-step exactly.
I think that motion seems to be sway back-check step.
