The mixer Alvin's using is too small. The Artisan line is meant for general household use, not the kind of volumes Alvin puts in it. It'll burn out just like the last one. He should be using a Pro Line 7 Quart mixer or the 8 quart Commercial Series.

That bun was so light and fluffy and beautifully made. I just wanted some butter and eat the bun by itself. The whole sandwich looked fantastic!

I feel like Tasty/BuzzFeed should invest in one of those giant industrial stand mixers that are as big as a person. I worked at Paris Baguette and remember that we have a giant one. It obviously makes sense for a bakery cafe that mass produces baked goods but would definitely help out not just for this show of Making It Big but also help out when they want to prep things in advance.
