I mean chefs like Gordon have a lot of knowladge about cooking, and they're right most of the time, but not always. They know the classic way of cooking, but what Guga does is the experimental part of it. Without trying new stuff you won't learn and grow, also if Guga's saying that this is good then I trust him. He was experimenting with meat so much that he is the true expert in this category.
