STRAWBERRY AND RICOTTA CAKE: creamy and irresistible!

INGREDIENTS (for a 20cm cake pan)
250g of ricotta
150g (¾ cup) of sugar
3 eggs
80ml (1/3 cup) of vegetable oil
150g (1 ¼ cups) of all-purpose flour
2 tsp of baking powder
Grated zest of 1 lemon
250g of strawberries, chopped
 
METHOD
1. In a large bowl, add the ricotta, eggs, sugar, and seed oil.
2. Mix with a spoon or fork until you obtain a smooth mixture.
3. Add the flour and baking powder, and mix again until fully incorporated.
4. Add the chopped strawberries and grated lemon zest.
5. Pour the mixture into a cake pan lined with parchment paper.
6. Bake at 180°C (350°F) for about 45 minutes.
