I think some clarification is needed. Specifically, the Jerusalem artichoke is the one that is rich in inulin. Jerusalem artichokes are root vegetables and not at all like the vegetable growing on a stalk that we typically picture when thinking of artichokes. Some may also know the Jerusalem artichoke as "sunchoke."

I think that you can get more bang for your buck by eating vegetables that are in season and that possibly are grown locally. I live in Italy and Bok Choy doesn’t often exist in supermarkets. Growing up in Indiana, I believe the only vegetable that we ever ate during July and august was corn on the cob. At its freshest and peak of nutrients. Capers I will start using more. Nutritional value is highest in foods that don’t have to be shipped halfway around the world. I love avocados and I pay a pretty penny for them since most come from Peru and 60% of the fruit is usually unripe or brown rather like the edible amount of artichokes. I think variety and seasonality are the best bets.

In the winter, where I live, cabbage, carrots, onions and turnips. Only ones that are even remotely affordable and available. They also keep well.

You can't live off a tablespoon or two of capers, 4 or 5 artichokes leaves and some bok choy. These can be added to your diet, of course, but they are not mainstays as far as vegetables go.

At least bok choy and pak choy are super easy to grow. I think we need to prepare for things not being available int he stores--soon.

The great thing about capers is you can sprinkle them on just about anything in the pan or after. A nice briny crunch and punch. Great in reduced pan sauces.

Chicory is also a great source of inulin, and much more common and cheaper than artichoke.

Plain ol' standard cabbages or even better, Brussel sprouts, are great sources of IC3 and cheaper and more available than Pak choi, book choi, etc. In fact, Brussel sprouts trump all brassica when it comes to IC3 content

I was expecting broccoli due to the sulphoraphane and micro sprouts due to the enhanced bio availability. These are what're Rhonda Patrick tends to mention most.
